pomegranate saladI love food, and I especially love food that is quick and easy to throw together.... This delcious mix energises both body and mind. Great simply eaten at home or served at a fancy dinner party. Pimped up with pretty pomegranates, they are a real super food, packed full of antioxidants to keep your energy levels high and your skin looking sparkley, smooth and youthful.

Quinoa Salad with Pomegranate and Avocado

1 cup quinoa (cooked in 2 cups of boiling water, about 10 minutes, until it forms white tails)
1/2 pomegranate (seeds scooped out, discard the rest)
2 handfuls of washed Organic Rocket (or arugula) or any greens you have on hand
1 Avocado (sliced thinly)
1 small bunch of organic basil and parsley (finely sliced)
1/8 Red onion (very finely finely chopped)
Goats cheese (if desired)

Dressing - I like to keep it simple but you can dress this wee salad with almost anything you like. Here's what I use....

Generous drizzle Extra Virgin Olive Oil
Juice 1/2 lime or lemon squeezed
Himalayan or Maldon crushed sea salt (never table or iodised salt) sprinkled over top
Crushed or finely chopped garlic (if desired - vary amount according to your preference)
